Anyway… we’re headed home after a long day when we pass by a Popeye’s. Popeye’s is a Louisiana-based company so I say “Baby swing in that drive thru and get me some red beans and rice.” Do I need to tell you what a monumental mistake that was? Let’s be clear—the drive thru Popeye’s in Richardson, Texas is NOT Louisiana cookin’.
Well after that I thought “How sad that some people never get to taste real Red Beans and Rice.” So here’s the recipe for perfect Louisiana Red Beans and Rice:
-Tony’s Chachare's Creole seasoning salt
Place beans in a large bowl, cover with water and soak overnight.
Drain and rinse beans, then place in Crockpot set on low.
Cover with water.
Remove meat from ham bone, finely chop about 1 cup of ham. Store the remainder of the ham for some other recipe!
Stir the chopped ham in with the kidney beans and water and add ham bone.
Cook on low for 8 hours.
Season to taste with a bit of Tony’s.
